Are you cracking your brains on what to dish out for your family gathering this Lunar New Year? Try this simple yet refreshing recipe to add some greens to your feast! Made up of crunchy ingredients, it’s not only tasty, but a real visual treat with its colourful mix of ingredients. Best of all, it’s a healthy dish suitable for all!

Ingredients
(Serves 4 to 6)

Sauce

  • 1 tbsp mushroom oyster sauce
  • ½ tbsp corn starch
  • ½ cup vegetable stock
  • ½ tbsp light soy sauce
  • ½ tbsp Chinese rice vinegar
  • 1 tsp sugar

Stir Fry

  • ½  tbsp ginger, grated
  • 4 cloves garlic, minced
  • 2-3 fresh red chilies, chopped
  • ½ tbsp Chinese rice vinegar
  • 1 tsp sugar
  • 3 tbsp cooking oil

Veggies

  • 100g shitake mushrooms, sliced
  • 1 carrot, cut into a 2-inch juliennes
  • 1 red pepper, cut into thin strips
  • 1 yellow pepper, cut into strips
  • 50g snow peas
  • 2 cups kale, chopped
  • 1 large tomato, sliced
  • 3 stalks spring onions, sliced
  • Salt to taste (optional)

Lucky Stir Fry with Kale

Method

  1. Mix all the sauce ingredients in a bowl.
  2. Heat wok and add the cooking oil, followed by ginger, garlic and chopped chilies. Cook and stir till fragrant, not browned.
  3. Add carrots and snow peas followed by peppers and mushrooms.
  4. Add in the sauce and toss.
  5. Lastly add kale and spring onions.
  6. Add salt if necessary.
  7. Mix well and serve immediately.

Adjust your ingredients accordingly if you are cooking for a party of more than 6. Give it a try and let us know it went!
